Yeung Chow Fried Rice Recipe 

Yeung chow fried rice also known by several other spellings and names, Is a popular Chinese Fried Rice dish. There are many varieties but it is most properly describe wish Egg, Mixed veg , Mushro0m’s typically pork and shrimp with scallions.

The difference between Yeung Chow Fried Rice and ordinary fried rice is that Yangzhou style invariably includes a combination of protein.

Rather than using a single protein like Shrimp or pork or Chicken as the dominant ingredient in Fried Rice, Yangzhou uses a variety .

Most commonly used is a combination of Pork and shrimp, roasted or boiled Chicken and Duck also found.

Yeung Chow Fried Rice was first popularized by the Qing Offiial , who had previously been the perfect of Yangzhou and is also traditionally created for Yi mein. Still there have been attempts by people in yangzhou to present the dish.

Ingredients

  • 1 cups Cooked Rice (Jasmine Rice)

  • 50gm Cooked Boneless Pork/Chicken/beef

  • 30gm cooked shrimp

  • 15gm Black Fungus Mushroom

  • 10gm Shiitake Mushroom

  • 5gm Garlic (fined chopped)

  • 20gm Carrot (julienne cut)

  • 1 pcs Egg

  • 10gm Oyster Sauce

  • 15ml Vegetable Oil

  • 5gm Sugar

     

  • 6gm Soya Sauce

     

  • 8gm Aromat Powder

     

  • 5ml Rice Wine

  • 2gm White Pepper

How to make step by step

  • First you need to soak the rice for one hour. Then heat water in a pan, then drop the soaked rice into the boiling water and wait until it is 80% cooked. Then take out the boiled rice and drain the water well.

  • Take a wok and heat it well, when the wok is hot, pour in the oil and fry the egg.

    add garlic and saute, now add carrot and saute 15 second.

    Now add the Shrimp and Chicken/pork/beef and stir well 20 second.

    Now add the mushroom and saute 5 second.

    now add the boiled rice and mixed well.

  • Now add the remaining spices mentioned above and fry well until the rice turns brown.

    Then add the Scallions and Rice wine.

    Now your Yeung Chow Fried Rice is completely ready, now you can share it with everyone.
